Sometimes I almost feel like a chemist in a laboratory when I walk through the aisles of my local supermarkets! Each time I make that trek I become more and more convinced that that’s not the place I need to be picking up items to put in my stomach. I’m convinced the packaged food aisles are simply halls of death masquerading toxic food additives as “flavor” enhancers or “benign ingredients”.

While packaged foods can be helpful sometimes (i.e. emergency foodstuffs for disaster relief, etc), they are definitely a class of foods every person should avoid if they value their lives!  Few people realize that those “packaged” foods they’re eating are loaded with toxic food additives!

Depending on what region of the world you live making sense of food labels can be a mysterious and frustrating task for the average person. For instance, here in the U.S. food label regulations and protections are ass-backward in my humble opinion.

Over the years, I’ve made it my business to become my own food and health advocate. I’ve been pouring over labels, ingredient names, questionable additives and so forth. What did I learn? Well, MY health and wellbeing are definitely not high up on the list of priorities for the packaged food industry!

Now I don’t know about you, but I LOVE my Mayo! I love it on my sandwiches and I sometimes use it as a base for some of my recipes. BUT after a bit of label reading, I was shocked to find an ingredient that is typically used in medical labs (and other industries), is showing up in my mayo! Say what? That’s right people. A dubious chemical that’s used in industrial processes and in certain medications, has a home in our mayonnaise! Everyday people seem to be missing the fact that this toxic food additive is hiding in their food!

Don’t take my word for it. When you read up on some of the “potential” health issues associated with this toxic food additive you will leave that jar of poison on the shelf too! I’m definitely not the only one raising the alarm about these toxic food additives and I am convinced that the more we rise up as consumers, the better of we will all be.

Coming from a background in the medical laboratory, I KNOW that this is nothing I want in my food. It has no business showing up on my plate! As a matter of fact, EDTA is actually banned in some countries outside of the U.S. (i.e. Australia) and is well regulated elsewhere (i.e. Europe) in its use in personal care items, etc.

EDTA is a chemical really should be in our food. The packaged food industry uses it as a stabilizer and preservative to give their products a longer shelf life-too bad it doesn’t give YOU a long shelf life!

Thanks to the organic revolution and food advocates, the use of these toxic food additives are coming to light. As a matter of fact, some of these large corporations are trying to rebrand themselves as “healthy” by doing what they should have done in the first place. What’s wrong with producing food items that are not harmful to consumers? There’s no need for “rebranding” if you don’t put questionable and toxic food additives in the foods you’re marketing to the public!

Enough with the additives already! If it’s not processed sugars, in our foods it’s chemicals with questionable impacts on our health and wellbeing. It’s up to us to help educate one another and compel our regulatory agencies and our legislators to do the right thing!

The processed and packaged food industries have done their best to hide what’s in our food as well as the origins of the ingredients they contain. Thanks to organizations like the EWG (Environmental Working Group )  and others like them, we are becoming educated about what’s in our food.

I have become a label fanatic simply to keep myself and my family from being poisoned by our food industries, which is a sad commentary on the state of our regulatory agencies here in the USA. While, I know no country has consumer protection down a 100%, we’ve got to do better starting with now.

As consumers, we need to educate ourselves about our food and demand that our legislators step up and force compliance. You really can’t trust the “fox” to “guard the henhouse”, that’s just nuts and totally ineffectual!

Bottom line? know what’s in your food and get involved in your community. It is our responsibility to rise up and demand better from the food industry and our legislators. The only way we can protect ourselves and our families is to get involved and educated about what’s in our food. I’ve found a number of online resources to help me fight back!

Toxic Food Additives: What’s In Your Mayo?

There are so many reasons why ingesting huge amounts of (processed) sugar is a terrible idea, but few people recognize the devasting impacts sugar can have on the body. Between the heavy marketing and confusing information from doctors and nutritionists alike, it’s no wonder that the facts get lost in the shuffle. Processed sugar in all its forms and packagings are literally killing us and if we don’t stop it right now, more people will die.

Here are some basic facts about sugar:

1.First and foremost, sugar contains a lot of calories and has no essential nutrients. If that isn’t enough to make you pause, consider the fact that it also causes tooth decay by fueling the production and proliferation of harmful bacteria in the mouth.

2.Next, added sugar is high in fructose and can overload your liver. A sedentary lifestyle coupled with the typical western diet that’s filled with processed foods, high in sodium and lots of sugar; the high levels of fructose in this type of diet is transformed into fat in the liver. The danger here is that it can lead to non-alcoholic liver disease.

So what’s the big deal?

The problem arises from the fact that when sugar enters the bloodstream from the digestive tract, it gets broken down into glucose and fructose. Now, while glucose is present in every living organism (if we don’t get it through diet our bodies can also produce), fructose is much different. This particular type of sugar is neither needed by the body nor do we produce it in any significant quantity.

While it’s not a problem when we take in small quantities (i.e. from fruits) since fructose can only be metabolized by the liver, consuming large quantities of this sugar can overload the liver. Not only this, fructose elevates your LDL (a.k.a. bad cholesterol), blood fats and lowers insulin resistance!

3.The big “C” or cancer is one of the leading causes of death throughout the world. It is essentially the uncontrolled growth and proliferation of cells. Also, since insulin is one of the major hormones responsible for regulating cell growth, excessive levels of this hormone can contribute to cancer.

Several studies also show that people who consume large amounts of sugar in their diet are at a much higher risk for both cardiovascular disease and cancer (with inflammation listed as a potential cause).

4. Still hanging on to that crazy train? sugar cause large amounts of dopamine to be released in the reward center of the brain and is very addictive. In fact, because of the large amounts found in processed foods, etc the danger lies in the fact these amounts are much larger than what we ordinarily are exposed to from natural sources.

The truth is that most of the processed and fast food industries are aware of the addictive nature of processed sugar but do little to address the issue so it falls to the consumer to educate his or herself about what’s in their food!

5. Experts now believe that consuming large amounts of sugar over a long period of time can accelerate the aging process. So those lines and wrinkles you’re seeing in the mirror? You can blame a good portion of that premature aging on your diet!

While the breakdown of the skin is the result of a natural process that’s known as glycation (a  process in which the sugar in your bloodstream attaches to proteins to form harmful new molecules called advanced glycation end products or AGEs). When you eat a lot of sugar you increase the amount of AGE production.

5 Reasons Why You Need To Ditch Processed Sugar

It’s soup time

It’s another fall day in the Chicago area and that means soup time! Don’t allow the seasonal shifts and the inevitable approach of winter, keep you from embracing your creativity in the kitchen. There’s nothing like a warm bowl of my savory butternut squash and potato soup to get you through those cold days.

Also, I like to use this time to buckle down on creating healthy meals for the upcoming holiday season and avoid the temptations of overindulging in foods that don’t do anything good for my body or mindset!

That doesn’t mean I don’t have fun meals and snacks during the holidays. It simply means that by staying aligned and balanced I’m more likely to sustain healthy habits that serve my higher good in mind, body, and spirit.

Today’s recipe is for my savory butternut squash and potato soup is simple, healthy and loaded with the goodness of an awesome full-bodied flavor!

Ingredients for this savory butternut squash and potato soup

  1. 5 medium potatoes or 2 cups, cubed. (Preferably Yukon gold or red potatoes).
  2. 1 medium (2 cups) butternut squash, cubed.
  3. 1 cup of cubed sweet potatoes.
  4. 2 cups of shredded kale.
  5. 2 cups of shredded red cabbage
  6. 1 cup of thin-sliced/shredded Brussels sprouts.
  7. 5 cups of water.
  8. 2 tablespoons of sea salt.
  9. 1 tablespoon of curry powder.
  10. 1/2 teaspoon of spicy paprika.
  11. 1/4 teaspoon of dried thyme.
  12. 1 tablespoon coconut oil
  13. 3 tablespoons of olive oil.
  14. 1/4 teaspoon of allspice.
  15. 1/4 teaspoon of nutmeg.

Putting it all together

Bring your water to a boil using a medium-sized pot. Next, add all your spices and sea salt to the water and boil until the mixture begins to release its aroma. Add your cubed potatoes (including the sweet potatoes) to the water and allow to cook for 15 minutes before adding in the squash (you don’t want to overcook your squash).

A good rule of thumb is to add the ingredients that require the most cooking time first and then incorporate the remaining ingredients accordingly. Since I want to preserve my nutrients as much as possible, I typically add my greens and more delicate veggies last.

Once all of the veggies have been added, allow the stew to simmer with the olive and coconut oil for 15 minutes (i.e. add the greens in the last ten minutes of cooking time).

Remove your savory butternut squash and potato soup from the stovetop and allow to set for 3mins and then this savory dish is ready to serve!

Every year, millions of women look forward to Valentine’s Day (at least in their heads) as a time to be appreciated, pampered and just fabulous! We start some new diet (usually accompanied by some unrealistic expectations, etc), renew our New Year’s resolutions, and sit back with bated breath as we wait to see what the universe will deliver on! As the days roll by, reality begins to creep in and the fake glitter of Valentine’s Day marketing fades away.

Fast forward to the middle of the month, and I’m wondering if we’re going to stick to our vision and commitment to a healthy lifestyle. January 2017 is long gone, February is long gone (with March a recent memory) and we are midway through April, but some of the same problems of 2016 are still at the forefront of our minds. While getting fit and healthy is the ultimate objective, too often we forget that this is a process, and with all of that comes a whole new set challenge. First of all, how do you stay motivated? Next, how do you stay focused (i.e. multitasking for work, family, etc) and find the time to get all of this done?

It’s all about priorities and recognizing that your health (i.e. mind, body, soul) is central to your life. The bottom line is this: if YOU are not healthy it is very little you can do (from a standpoint of sustainability) in terms of meeting the needs of both yourself and your family. We live in an age where high stress, insufficient sleep, and poor diet are becoming the new normal, while at the same time, chronic illness, obesity, etc continue to rise. Add to that the issue of our unsustainable and corporatized healthcare system, and you have the makings of a perfect storm of everything that can go wrong!

My goal here is not to scare the crap out of anyone; it is simply to encourage us all to make our health the main priority, and recognize that health and balance are central to life. At the most basic level, balance is key to any sustainable system (our bodies included) and requires work and commitment in order to continue. In simple terms, you should not be living to work (i.e. job, career, etc) but working to live! In other words, your job or career should not overtake all other aspects of your life in the same way that your personal life should not overshadow your professional or public arena.

So how do you STILL fit in a healthy eating and fitness plan, restore balance to your life, etc? Well, you simply stick to the P.L.A.N. and remain focused on your goals (i.e. living a balanced and healthy lifestyle, etc). I’m not saying there are no challenges in maintaining your health and fitness goals, but it is more than possible to be aware of what you’re eating, finding and using your “me” time to work out (it’s also an excellent way to deal with stress), and staying balanced in all (or most) areas of your life. Experience has taught me that the best way to do this, is by taking a step back and finding joy in the little things; a crisp sunny Fall day, an invigorating walk along the trails, or simply enjoying a hot cup of tea or coffee on the front porch (backyard, on the veranda, in front of your balcony, etc).

For the everyday woman whose life is at the crossroads and who feels like she needs not just her health and fitness in balance, but life in general, I say, WELCOME! I have found that every woman is unique in terms of her story and her needs, especially at the “crossroads”.

Why? The answer is relatively simple. The needs of a woman who is already stressed, out of balance both physically and mentally (i.e. overweight, frustrated, overwhelmed) are different from one who has her career, obligations, and family on track etc, but just needs “some” help losing a few pounds and learning how to eat healthily!

The sad truth is that most of us women (especially if you haven’t seen 30 in a long while) struggle with a chaotic and unhealthy life, but rather than valuing ourselves enough to change it, we choose for one reason or another, to stay on that hamster wheel going nowhere!

We need to admit and own our truth when it comes to our relationship with food and by extension, how we relate and perceive ourselves as well as others. we seem to be ignorant of the fact that FOOD plays an important role in our lives and an important aspect of culture. I guess like so many other things in this high-tech age, this is just one more thing that has become lost in the matrix of” sameness” perpetuated by a media that serves itself rather than the welfare of society at large.

I’m not saying we bear no responsibility for our own health, but I AM saying is that the media bears some responsibility in terms of pushing “unhealthy” images and ideas of what constitutes beauty, a “healthy weight”, “healthy” foods (i.e. so-called fat-free, zero calories) etc. Our current mainstream media has in large part become the mouthpiece of big Agri-business and corporations more interested in their bottomless than the wellbeing of society.

This is why I do what I do! I decided to get active and advocate for women’s health and to empower other women to fight back and reclaim their health, fitness. My goal is for women in my zone of influence to become knowledgeable about their food sources and equip them with the necessary tools to gain control of their health and nutrition. I’ll always remember these wise words of my mom, “knowledge is power” and “the gates of the school-house are still open”!

If You are tired of unhealthy crap being packaged and marketed to you as healthy, “low” in fat, etc, then get involved and educated about who controls your food- you are what you eat folks! The hard truth is that, if after all that hard work of getting fit and adopting a healthy lifestyle you’re still depending on big Agri-business and the fast food / packaged food industrial machine to give you good (derived from sustainably grown, mostly pesticide-free or organic) quality food, dream on. An educated public is an empowered one, and too often that empowerment is in conflict with the bottom line of these corporations.

So what do I do to cut out the crazy and NOT break the bank? I keep it simple. Stick to mostly seasonal produce, buy my produce from local farms, buy organic where necessary (avoid the “dirty dozen”) and get involved in a local or community farm if at all possible. At the end of the day, you and your family are worth the time and effort, believe me!

Who hasn’t gone through a time (especially in the summer months), when they were constantly hungry but never seemed to get satiated even after eating a full meal, snacks, etc. I can remember summers where I ate like a horse (had some sips of water throughout the day too!) and it felt like I couldn’t get full! Don’t even get me started on the consequences, a.k.a. “mystery pounds” that just seemed to show up on my stomach, thighs, and butt!

Needless to say, those were some less than happy summers, especially when you factor in me wanting to make sure I had my cuteness factor dialed up to ten, hahaha!

Fast forward to the present and bam! Mystery solved! It’s actually true! In simple terms, your brain can misinterpret thirst for hunger. But first, let’s get a clear definition of both thirst and hunger. In his article entitled “Hunger and Thirst: Issues in the measurement of predictions of eating and drinking”, Richard Dr. Mattes gives the following: “It is first necessary to provide operational definitions of hunger and thirst. Hunger describes those sensations that promote the attainment of minimal energy needs while thirst represents sensations that promote the attainment of minimal hydration needs. ” He also goes on to mention that making the distinction between the two is one that is often made more complex due to a number of factors that feed into the “sensation” of hunger and thirst, namely, individual variability, social behaviors, and physiological attributes, symptoms, etc.

Let’s not even add to that, the constant barrage of media campaigns designed to feed (no pun intedended) and tap into our feelings of nostalgia, comfort and insecurities. These “emotional” wells have  psychological impacts are exploited by marketing campaigns for the sole purpose nudging the public into making particular food choices that are, in most instances, very poor nutritional options.

Unfortunately for a significant segment of society, one of the main consequences of this is the neat epidemic level of diabetes, heart disease and other diet related illnesses. Who would have thought that something as simple as making the distinction between thirst and hunger, could have such potentially, far reaching consequences?

I’m not saying that the, ability to make the distinction between hunger and thirst is the primary root cause or a strong enough association, with the occurences of diabetes and other diet related diseases and illnesses,  but it does give one food for thought.

My take away from all of this? Before you fill your plate, why not try a glass or two of water and give your brain some time to catch up with your stomach?! The bottom line is that distracted eating is problematic and so is allowing your daily routine to become so busy and out of balance,  that something so basic as nutrition and health become the losers in this equation.

Fast food masquerading as “quick” healthy alternatives to mindfully  (a.k.a. foods that have no foreign additves, preservatives, etc) prepped are not beneficial to anyone in the long run.

Also, rushing through meals, not properly hydrating the body with water (rather than sodas, and drinks or beverages marketed as good substitutes for clean water), and choosing convenience over substance leads down a path that does not end well. Which brings me back to this whole issue of making the distinction between thirst and hunger; “mindless” or “distracted” eating can translate into, consuming more calories than what the body needs, snacking on empty calorie laden foods, and so forth.

Ultimately, balance is the center of it all. Good health is part and parcel of a healthy lifestyle in which self-care  (i.e. fitness,  exercise, stress management,  meditation,  mindfully eating, etc ) is viewed as a necessity rather than optional.

Are You Thirsty or Hungry? The Way Your Brain Operates.

Why the obsession with nuts and seeds?

People often ask me why I’m so obsessed with seeds and nuts. I could rattle off a whole list about why they’re so great.  I’ve since discovered that less is more, and simplicity is worth appreciating. The fact is that we ( homo Sapiens) are at our optimal health and fitness when we adhere to a diet that is diverse and nutritionally dense. We see the truth of this from the historic and evolutionary record ( I won’t bore you with the details). Also, we see the current health crisis many in the industrialized (as well as underdeveloped nations) are facing in terms of ever-increasing numbers of diabetes, cancer, as well as autoimmune diseases resulting from processed food.

The American diet

It is no small coincidence that our dependence on so-called “quick” and “processed” foods have a strong link to the diseases and associated syndromes listed above. The bottom line is that processed foods, our dependency on them, coupled with a lack of adequate exercise, have brought us to this unhealthy state. Add to that unsustainable environmental and agricultural practices, and a grim picture begins to unfold for the human race.

What are nuts?

In simple terms, nuts can be defined as “small dry hard-shelled dry fruit or seed with a separable rind or shell and interior kernel” (Merriam-Webster Dictionary definition). A much more detailed definition is provided by the National Institutes of Health (see National Institutes of Health website). The NIH states that nuts are “nutrient-dense foods with complex matrices rich in unsaturated fatty and other bioactive compounds: high-quality vegetable protein, fiber, minerals, tocopherols, phytosterols, and phenolic compounds.” Translation? nuts make up a powerhouse store of complete nutrients (i.e. fats, fiber, carbohydrates, etc).

 

Some nutrition facts

All that being said, there is such a thing as too much of a good thing. While nuts are nutrient-dense, they do contain fat. That means you must balance them with other sources of vital nutrients that contain fewer calories as well as fats. The key here is “BALANCE”! Thar’s in terms of nutritional intake (i.e. amount per serving, etc) as well as a proportion of other nutrient sources. For instance, a balanced intake of nuts (and or seeds, i.e. sunflower walnuts) would be equivalent to 1/3/ cup or 1 and 1/2 oz of nuts 3-4 servings per week for a 1,600 calorie diet. For a 2,00 calorie diet, this would be 4-5 servings per week  (American Heart Association: 2013 Healthy Diet recommendations;Eckel, Robert H. et al. “2013 AHA/ACC).

About seeds

While similar to seeds in terms of nutrient content, seeds are, in simple terms, the embryonic stage of a plant housed in a protective outer shell or hull. The dietary guidelines for seeds are similar to those for nuts, but the caveat remains the same; balance, balance, balance, is the mantra we should all stick to when it comes to nutrition, health (mind-body), and fitness. Why am I pushing them? I’m a firm believer in balance and the important role it plays in our health and fitness for a healthy lifestyle. My personal experience alone has driven home the power of a well-balanced and nutrient-dense diet. Also, from a physical fitness perspective,  a poor diet will doom you to failure and injury (i.e. failing to fuel your body with what it needs for recovery and growth).

Some observations

From a female perspective, I’ve come to learn the importance of incorporating dietary balance into my daily regime. I do this to keep my body aligned as it deals with changing hormone levels, stress, and illness. While nutrition and fitness alone can’t ward off the negative impacts of illness, disease, time, etc, they are powerful strategies to help us stay healthy and whole.

Now that we’ve got most of the year’s holidays done, I refuse to forget the effort I used to power through this journey and,  the vision that led me to this point. I love the holidays and most of the seasons (still working on “loving” winter) but I certainly don’t want to fall victim to the “holiday blues”, a.k.a “woulda, coulda, shoulda, regret, *sigh*. I’ve finally learned that all of “that” just locks you into a negative mindset and an inability to move forward with the action (a.k.a . being stuck in the crossroads) necessary to make change and progress in your life.

I don’t claim to have a magic pill for this, only a few words of advice based on my own personal experience and observations: life is about G.R.O.W.T.H. and it will stretch you whether you’re ready for it to do so or not. Bottom line? Get comfortable with being uncomfortable and your life will be filled with more fulfillment, passion and balanced!

I often say three things to all my potential clients: 1.make a decision, 2. get a plan, and 3. take action! If YOU want to take back control of your life and by extension, your own personal wellspring of power and passion, YOU must get passed all those “negative thoughts” and “things” that have been telling you that you’re a failure or you’re not strong enough to make it to the finish line. I always remind my tribe that good health and fitness is a reflection of an empowered and fulfilled individual. In other words, just as fatigue, stress, insomnia, obesity etc arere indicators of an unhealthy and unbalanced life, the reverse is also true! Good health, fitness (i.e. mind-body and soul) point to a life that is in balance.

Rather than dwell on the failings of the past year, renew your determination to push through to your own personal victory and accept the challenge to “get uncomfortable” and enjoy this journey to true fitness and health and leave behind the gimmicks, tricks and lies we often tell ourselves in order to avoid  real C.H.A.N.G.E. Now, having said all that, I’m gonna keep on with my holiday hustle to end 2016 with a bang and not a whimper of defeat and regret! What about YOU? Are YOU up for it?…
